Homemade Waffles

2 cups all purpose flour
1 tablespoon sugar
4 teaspoons baking powder
1/2 teaspoon salt
2 eggs, room temperature
1 teaspoon vanilla
1/2 cup unsalted butter, melted
1 3/4 cups milk, warmed
First, heat up your waffle maker and have some cooking spray or butter ready to stop the waffles from sticking. Warm the milk in the microwave for about 1 minute at a time until it feels warm, because cold milk can make your melted butter solidify again.
In one bowl, mix together the dry ingredients. In another bowl, beat the eggs until they look light, fluffy, and pale. Then, combine the eggs with the dry ingredients. Next, stir in the vanilla, warm milk, and melted butter until everything is smooth.
Spread butter or cooking spray onto the hot waffle maker before you pour the mixture and cook until they are golden brown.
Serve your waffles with pure maple syrup and butter or your favorite fruits and whipped cream.
